ALL YOU NEED TO TAKE THIS CLASS ARE:

  • Fresh-ground corn masa
  • Powdered masa harina
  • Tomatillos, husked, and rinsed
  • Fresh hot green chiles
  • Fresh cilantro
  • White Onion
  • Salt
  • Ripe tomatoes
  • Garlic Cloves
  • Dash of vinegar or squeeze of lime
  • Small hot dried chiles
  • Sugar (optional)
  • Mexican chorizo sausage, casing removed
  • Red-skin boiling or smallish Yukon Gold potatoes
  • Warm corn tortillas (that you'll make!)
  • Avocado-Tomatillo Salsa
  • Rich-tasting pork lard, vegetable oil, or bacon drippings
  • Fresh serrano chiles
  • Lime Juice
  • Thin-cut beef - Look for cecina, tasajo, or butterflied skirt steak in a Mexican market, or thin-cut round tip.
  • Guacamole
